Wine-making Process

After pressing the grapes, the wines starts the alcoholic fermentation in contact with the skin for 5 days, in stainless steel tanks with automatic control temperature system and “remounting” (21-23 °C).

The wolf, "LU" in Piedmont dialect, that plays with the child, symbolizes the deep bond and the affectivity of man with his territory and nature. The integration with the nature, even if aggressive, enables to play with a wild animal. Grignolino d'Asti is a ladylike wine that Re Umberto I prefered to his canteen, resulted to a vineyard grown before the eighteenth century. It's peculiar with its soft ruby red colour, and it assumes brilliant and typical orange reflexes.  The bouquet is ladylike and persuasive with fresh raspberry flavour.
