When the grapes are matured, cutting of the shoots ad further withering of the grapes in the vineyards until the end of october. The grapes are then collected in small basket and stored in a room with authomatic control of humidity and temperature, for further withering.

Soft pressing of the grapes after the total withering of the grapes and after the last selection.  Fermentation as per the white wine, refining in inox steel ctainer; last refine in bottle for 1 month
